Hi spanky, An output code of "250000" is much more reason that what you'd be observing before... For a gain of 1 V/V and a 5V reference, "250000" corresponds to a voltage measurement of 0.58mV, which is a voltage you might expect at the output of the load cell, due to offsets and self-loading of the load-cell's "pan", for example. Performing a system offset calibration can help to remove this initial error and provide you with an output code much closer to zero when no load is applied. I'm not sure what what could have been the issue on your last board, but your theories are quite possible. To determine if it was soldering damage you'd have to try replacing the device and re-testing to see if a new device performed better.
