We have been applying the voltage source to one channel at a time.  With some further testing we think we are getting a better understanding of what is going on.  We could use some clarification of the data sheet.

Is there a reference design or schematic of the ADS8363 set up for pseudo-differential operation?  There is nothing in the data sheet.

What is the input common-mode range in pseudo-differential mode?

Is there a list, like Table 13 on p. 28 in the ADS8363 data sheet, of the digital outputs for various input and CM voltages in pseudo-differential mode?
